Chocolate and roasted hazelnut cookies

(Makes 10-12)

Crisp on the outside and gooey in the middle  - bake straight from the freezer. You can leave the nuts out if you wish.


  • 225g unsalted butter
  • 200g light brown sugar
  • 100g golden caster sugar
  • 2 medium eggs
  • 360g self raising flour
  • 1tsp cornflour
  • 1/2 tsp salt
  • 1 tsp bicarb
  • 350g milk chocolate (chopped)
  • 100g roasted hazelnuts (chopped)

Heat the oven to 200C
Mix butter and sugar until fluffy and combined. Then beat or another 5 minutes until light, paler and fluffy.
Add one egg, mix.
Add the final egg, mix.
Add the flour, cornflour, salt, and bicarb and mix until combined.
dd in th chocolate and nuts - don't over mix.
Spoon into 10 - 12 mounds.
Freeze for at least 30 minutes.
Remove and cook for 8 minutes, turn the tray and bake for another 4 minutes.
Allow to cool on the tray for at least 20 mins.
